What Not to Cook in a Dutch Oven: The Caveat List
Bare iron + long acid = rust
A 2-hour tomato braise or vinegar-based simmer in bare iron will degrade the seasoning. The acid eats away the oil layer. You will get rust spots. A single acidic braise is survivable; repeated ones wear the pot. Use enameled iron for braised tomatoes, wine reductions, and vinegars. Reserve bare iron for oil-based cooking.
Delicate fish at high heat
Enameled dutch ovens get screaming hot. Delicate fish (sole, flounder) at 500°F will cook so fast it overcooks and falls apart. A thick fish steak (tuna, salmon) is fine. Delicate white fish is better in a regular saucepan on the stovetop.
Preheat gently, never empty on high
